Shazia’s Favourite Dabba Gosht Recipe

 

INGREDIENTS

·        Mutton : 500 gms. (boneless – cut into small cubes)

·        Onion : 1 (finely chopped)

·        Green Chillies : 5 (finely chopped)

·        Ginger paste : 1 tsp.

·        Garlic paste : 1 tsp.

·        Cashew nut paste : 2 tbsp

·        Eggs : 3 (whisk with salt and keep aside)

·        Oil : 3 tbsp

·        Cumin seeds : 2 tbsp.

·        Milk : ½ cup

·        White pepper powder : ½ tsp.

·        Cream : ¼ cup

·        Cardamom powder : ½ tsp.

·        Ghee : 4 tbsp.

·        Potato Chips : 50 gms

For White sauce

·        Corn Flour : 2 tbsp.

·        Butter : 1 tbsp.

·        Milk : ½ Cup

·        Processed cheese : 10 gms

Prepare the white sauce as demonstrated by the chef

For Garnish

·        Fresh Coriander : 1 tbsp (finely chopped)

·        Tomato : 1 sliced

 

METHOD

1)   Heat oil in a pan, add cumin seeds, onion, green chillies and sauté till translucent

2)   Add the ginger, garlic paste and sauté for ½ a minute

3)   Add the mutton & sauté for 2-3 mins

4)   Add the milk along with 1 cup of water and allow the mutton to cook till almost done.

5)   Add cashew nut paste, salt, white pepper powder & stir till the gravy thickens. Add cream and cardamom powder. Add the prepared white sauce and cook till everything is combined.

6)   Pre-heat oven to 170 degrees centigrade.

7)   Remove the mutton in a Dabba or a handi

8)   Layer with and tomatoes and potato chips

9)   Heat ghee, put some beaten egg onto the mutton, pour hot ghee on top, repeat the process till the beaten egg is used to seal the mutton.

10) Place this in the oven for 15-20 mins.

11)  Garnish with coriander leaves and serve
